A Year at the Table: Dining Through Sydney's Seasons

Executive Chef Mariko Tanen rewrites the Lodge's menus with the harbour's calendar — truffle winters, crab summers, and the brief spring window when Sydney's produce is at its most persuasive.

Ask Mariko Tanen when to visit Ironbark Lodge's restaurants and she refuses to choose — the calendar, she says, is the menu. Each of the six dining rooms turns with the season, but the rhythm is hers: four acts, twelve menus, and a larder drawn from farms inside the Sydney basin.

Spring: The Short, Bright Window

September and October are the larder's brief perfection — asparagus from the basin's market gardens, the first Sydney rock oysters after winter, native greens at their most delicate. The Chef's Table runs a spring progression that begins with finger lime and ends with strawberries picked that morning.

Azure devotes the season to raw preparations — kingfish crudo, oyster selections by estuary, a seafood platter built each dawn from the fish market's best of the day.

Summer: The Harbour's Season

December through February the kitchens lean into the water — blue swimmer crab, pipis, whole roasted reef fish served metres from where it was landed. Lunch extends long on the terrace; the supper menu at The Still Room runs until 02:00 for guests returning from the salons.

Five dishes that define the Lodge's year

  • Spring: asparagus, finger lime and smoked crème fraîche tartlet.
  • Summer: blue swimmer crab with tarragon butter on the terrace.
  • Autumn: dry-aged duck over ironbark coals at Fume.
  • Winter: truffle risotto finished tableside in the Still Room.
  • Year-round: the 07:00 first bake — croissants from the pod oven.

Autumn and Winter: Fire and Depth

March brings the game and the grill — Fume's ironbark coals carry dry-aged duck, whole Murray cod and the smoked-honey desserts regulars plan their trips around. Winter is truffles from the tablelands, slow braises and the cellar's deepest pours by the fire.

The Constant: The 15-Kilometre Promise

Whatever the season, the sourcing radius holds: vegetables, honey, native botanicals and much of the dairy come from partner farms inside the Sydney basin. The menus change weekly; the promise does not.

Booking the dining rooms

  • The Chef's Table books out 4–6 weeks ahead — villa guests hold priority.
  • Ask the sommelier for the Australian Icons pairing — it is the house signature.
  • Thursday to Sunday terrace tables go first; book lunch for the harbour light.

The Chef's Table is the signature — twelve seats inside the kitchen, seven courses plated at the pass. For a first evening, it is the most complete introduction to the brigade's work.

Azure and the terrace serve lunch daily from 12:00; Fume opens for dinner, and The Still Room runs its late supper menu until 02:00.

With 48 hours' notice the brigade rewrites menus around allergies, vegetarian, vegan and halal requirements — at the Chef's Table the whole progression adapts.
